Overview

ICE HKA G&S together with HKIHT YC is hosting a wine and cheese pairing evening led by a professional wine expert. Centred around the dynamic theme of "Old World vs. New World," our expert brings a practical, engaging approach to unpacking the fascinating contrasts in global winemaking.

Throughout the session, participants will be introduced to the history, terroir, and production philosophies that distinguish classic European regions from vibrant New World vineyards. Our expert will then guide guests through a curated, side-by-side tasting, demonstrating fundamental tasting techniques and explaining the core pairing principles that reveal how texture, aroma, and regional tradition shape harmonious matches. Light snacks and artisan breads will also be served for palate cleansing.

The curated tasting list includes:

  • Welcome Drink: Botter Prosecco Spumante, Veneto, Italy
  • Riesling: Frey Riesling Dry Organic (Germany) vs. Howard Park Flint Rock Riesling (Australia) with Brie
  • Chardonnay: Jean Francois Protheau Bourgogne (France) vs. Vavasour Chardonnay (New Zealand) with Gruyère
  • Pinot Noir: Patriarche Bourgogne, Cote d’Or Rouge (France) vs. Starborough Family Estate (New Zealand) with Emmental
  • Cabernet Sauvignon: Chateau Campillot, Medoc, Bordeaux 2015 (France) vs. Tabali Talud 2022 (Chile) with Medium English Cheddar

Participants will leave with practical serving knowledge, improved tasting confidence, and a deeper appreciation for the craft behind both wines and cheeses.
